Winter Salads To Keep You Healthy


Winter means a good bounty of veggies and fruits at your disposal! Everything is fresher, greener and crispier!

The perfect season to enjoy nature’s goodies in the simplest yet yummiest form, yes I mean salads! Have them cold, have then warm, the possibilities of ingredients, toppings and dressings are endless.

So what are you waiting for? Whip out the salad spinner and let’s get going!

Roasted Pumpkin and Goats Cheese Salad

A riot of colours with roasted cubes of pumpkin, spinach leaves, ruby red pomegranate kernels and pristine white goat’s cheese, this makes for a nice comforting dinner salad. The roasting caramelizes the pumpkin adding a sweeter dimension to this salad. Drizzle a little vinaigrette on top and tuck in!

Greens and Citrus Salad

 Pretty as sunshine, and yummy too!! Throw in your favorite greens, lettuce, rocket, radicchio, fennel and spinach. Complement it with oranges, sweet lime, pomelo, tangerines and blood oranges. A dash of olive oil and lime juice, it makes for a great lunch on a busy workday!! Pro tip – add some toasted nuts for a different texture to the salad.

Warm Cauliflower and Chicken Salad

Rough chop the cauliflower, drizzle olive oil and season well, toast it in the over till its soft inside and crispy on the outside. Add it to a bowl of grilled chicken and top with salad greens for a very comforting and satisfying meal!

Couscous Salad

These yummy pearls are tossed in a salad with salty feta, pomegranates, roasted sweet potatoes and toasted pine nuts. Drizzled with a dressing of olive oil and honey and cinnamon, its one exotic salad that you need to try out. You could add in some shredded roast chicken or boiled veggies of your choice and stir up things a bit!
